Hello Darling Dirtlings,
This year, I'm passing the herbal recipes torch over to someone very special - my husband Andrew. While you might know him as the creative force behind wildlife documentaries (check out his work at offthemap.media), what you might not know is that he's also a kitchen aficionado (and the person whoβs generally fueling me with good food behind the curtain). And now, he'll be the one crafting the monthly herbal recipes for The Dirt Clubhouse membersβ lucky you!
For his debut recipe, Andrew made a truly delicious Lemon Basil Olive Oil Drizzle Cake (that Iβve already eaten five slices ofβ yes, I doth spit in the face of New Yearβs resolutions). This isn't just any cake - it's a love letter to one of our most cherished herbs, basil (Ocimum basilicum). This aromatic herb has been revered for centuries, not just for its culinary uses but also for its ability to lift spirits and clear minds (excellent on these cold, dark, dreary days of winter when your brain feels as shrouded in clouds as that unwieldy mountain pass).
What makes basil particularly special is its versatility. While most know it as the star of pesto, its sweet, peppery notes can actually transform both savory and sweet dishes. In this cake, basil adds an unexpected sophistication that would make even Martha Stewart swoon.
So, if youβre ready for some summer sunshine on a plate, check out the Lemon Basil Olive Oil Drizzle Cake recipe below:
